White Chocolate Raspberry Almond Bars


Ingredients:

  • ½ Cup of butter
  • 2 Cups of vanilla milk chips
  • 2 Eggs
  • 1 Cup of flour
  • ½ Cup of sugar
  • ½ Tsp. of salt
  • 1 Tsp. almond extract
  • ½ Cup of Raspberry jam [I use slightly more than this]
  • ¼ Cup of sliced almonds, toasted

Directions:

Heat oven to 325.° Grease and flour an 8" or 9" square baking pan.

Completely melt butter in small saucepan over low heat. Remove from heat, and add 1 Cup of vanilla milk chips. Let it stand, and do not stir.





In a large bowl, beat eggs until foamy. Gradually add sugar until lemon-colored. Next, stir in vanilla chip mixture.






Add dry ingredients [flour, salt] and almond extract.Stir at slow speed until just combined [I do this by hand].






Next, spread half of the batter into the baking dish. Bake from approximately 15-20 minutes, until slightly golden brown [it later goes back in the oven, so it does not need to be completely cooked]. Stir in remaining cup of vanilla chips into the batter, and set the mixture aside.

Melt the raspberry jam into a small saucepan over low heat [I sometimes just use the microwave for 15 seconds, stir, and then 15 more seconds...it's a bit less messy].

Spread approximately one half the jam evenly over the warm, partially baked crust.Then gently spoon teaspoons of the remaining batter over the jam spread [some of the spread might show through the batter].





Finally, bake for an additional 25-30 minutes, or until a toothpick comes out clean. Spoon the remaining jam over the baked bars and sprinkle with almonds.






Cool completely before tasting [allow approximately 2 hours]. Cut into bars, and enjoy!

Total time:70 minutes [approximately]

I like the pictures of the process, especially on 'trickier' recipes, this really helps someone like me who tends to skim the instructions and proceed with paying enough attention to detail! The pictures help you understand what your step should look like as you go. I am wanting to try making these, perhaps to take to my Aunt's when we go visit in a couple of weeks?

I came across your blog while I was reading Desiree's and I wanted to let you know I hosted a dinner party last night where I used two of your recipes. Both were a huge hit!

The chicken pockets were awesome and flavorful! I doubled the recipe but somehow ended up with waaaay too much filling for four packages of crescent rolls. Maybe I didn't stuff them enough? I also made an educated guess on whether or not the soup was supposed to be condensed or not... thank goodness I guessed right!

The white chocolate raspberry almond bars were also a hit. They turned out cakier than I expected but delicious nonetheless. I also doubled that recipe.

I love the fact that you posted pictures of the dish in various stages of completion. I love to cook, but I am always concerned about the presentation of the final product. Looks good. I will definitely have to try this little treat. Thanks!
